David Duband, the winemaker
Domaine Duband
It all started in 1965 in Chevannes, a small village in the western Hautes-Côtes de Nuits. There, Pierre Duband farmed fifteen acres of vines, harvesting grapes and selling them off to the local cooperative in Beaune. Despite his potential, Pierre never actually made wine of his own- though twenty-five years later, his son David would become the estate’s game-changer. Pierre set his eyes on one small acre in the respected Nuits-Saint-Georges appellation, with high hopes set out for the family’s wine-producing future. After graduating from oenology school in 1991, David returned to Nuits-Saint-Georges and got straight to harvesting the new plot, using the basement cellar of their home to produce the winery’s very first vintage.
But it wasn’t just his dabbling in Nuits-Saint-Georges that caused David’s winemaking career to take off; thanks to his father, David was introduced to Francois Feuillet, an avid Burgundy aficionado, desperately in need of a winemaker to tend his newly purchased plot, Aux Thorey-- a premier cru within the region. Feuillet took a shot on David; after witnessing his undeniable talent with Aux Thorey, Feuillet went on to purchase additional vines in more the renowned appellations. Naturally, David’s skills were enlisted-- and the bottles produced were unforgettable.
Twenty-five years later, Domaine Duband's own wines have become highly sought after, consistently claiming high praises year after year. With 23 different appellations and over a quarter century of winemaking under his belt, it’s no surprise that the wines of Domaine Duband regularly surpass the mark. Traditional Burgundian winemaking methods are implemented: hand harvesting, crushing by foot, and more recently, an emphasis on whole bunch fermentation, of which he tends to do 30-40%. Wines are aged in oak barrels, with an emphasis on round, approachable tannins.
His entire range of bottles, from the basic Hautes-Côtes de Nuits to the 1er and Grand Crus, are all made with the same attention to detail, producing wines full of refined fruit and structured elegance. As of 2006, the domaine converted entirely to organic farming, with the dual purpose of respecting the land and producing clearer, more terroir-reflective wines
